Parkin是一很很古老的英甜,
自英格北部的克郡(Yorkshire),
有路料是的Bonfire Night Treat.
每年的11/5是英的Bonfire Night,也叫Firework Night,
或是Guy Fawkes Night.
(有趣者可以Google或是Wiki一下。http://en.wikipedia.org/wiki/Guy_Fawkes_Night)
各地方都升起火、大放火,有些家庭也在後院放火,
直到了火的地步,晚的夜空,可以是美不收、常。

配合,米其好念起Yorkshire的Parkin
田先生的同意,把他家族流代的奶奶食分享出唷!
米其然手做,倒是吃了很多次,那Solid的口感、
特的味黑糖,是冬天令人感到大足的甜喔!

Winifred Doherty’s Parkin Recipe (circa 1935)
田奶奶的Parkin食

1 lb (450 g.) flour /粉
1lb. (450 g.) Medium oatmeal/介於粉末完整的燕片
1 lb. (450 g.) Treacle (golden syrup)/芽糖
8 oz (225 g.) Sugar/糖佳
8 oz. (225 g.) Lard or margarine/人造奶油(在人已不太吃油了!)
1 tablespoon ground ginger/嫩磨碎
lb. (225 g.) preserved ginger/罐(包含汁。英Tesco很容易到,台目前有看到。)
1 teaspoon baking powder/粉
Grated rind of 1 lemon/檬皮研磨少
1 pint (1/2 litre) milk/牛奶

Warm the treacle and lard in a pan.
1.人造奶油或牛油加入芽糖候在中加。
Mix all the dry ingredients together.
2.粉、燕片(粉)、磨碎的、糖、粉等乾料混合用。
Pour the warm treacle and lard into the middle and add milk - make fairly sloppy.
3.的糖倒入2中加入牛奶混合均,使其黏稠。
Cook in a moderate oven for hour.
4.放入的烤盆中入烤箱用中火烘焙45分,直至中心起。
(田先生建以165度烘烤1小)

查是否完成的方法:用刀子插入,如抽起有沾黏,表示中心也烘焙完成;如果有沾黏,就表示有好喔!(盆也不要太深)

份量:由於Parkin有很heavy的口感,比合冬天配咖啡享用,一人也吃不了太多,以上食的分量,我得足八到十人吃唷~
也很合郊,止很好用,而且耐久放。以前的人都是放一之後才始食用的,等吃完可能一月就去了~
Parkin 是否heavy其燕片的影很大,可以不要放完整的燕片,磨的比好,但又不是全碎那,才吃得到他的口感啊~


田的叮:
I don’t know what ‘moderate oven’ means. The most recent parkin I made was cooked at 165 degrees C for about an hour. I’ve done others at 135 degrees C for nearly 2 hours. Another suggestion: use more golden syrup and less sugar. I think this makes it moister. If you can’t find oatmeal (i.e., oat flour), porridge oats also work (but make a slightly heavier cake).

^是在New Castle吃到的甜,介於布朗尼跟Parkin之,通常甜本身不是很甜,可以的吃,英人都配上香草冰淇淋喔!(super rich ~)

那配香草冰淇淋甜是我最的Sticky Toffee Pudding啦! 很甜, 淋上太妃糖更甜, 再加一球香草冰淇淋或是的蛋奶, 完全溶化寒夜刺骨. 如果能搭一樽格一芽威士忌, 人生何求.....
